“60% pinot and 40% chardonnay made in the traditional method. Following a second fermentation in bottle, the wine was given further complexity with 2 years of lees ageing and the addition of older wines at disgorgement, aged in older oak. Good gear. More of an apero style than a rich, creamy one. This said, the lees detail imbues complexity to notes of baked apple, nashi pear and oyster shell. The dosage appears minimal, promoting a saline freshness and a refreshing plume of a finish.”
